I found this project awhile back, and the guy does really great work. He takes original Zelda compositions and recreates them with some Mac software (he may say on the site, not sure) and realistic samples. I've always really liked the music of Zelda (perhaps by Koji Kondo? I think, not sure), but check it out. Everything's available for download, and is licensed under a CC license.
